Oh So Tasty Dips & Dressing

Tahini Dressing

100g hulled tahini
30g honey or rice malt syrup
½ teaspoon mild English mustard
½ teaspoon grated garlic
75ml apple cider vinegar
2 teaspoons salt
100ml avocado or macadamia oil

1. Place all ingredients except oil into a bowl and whisk to combine.

2. Slowly drizzle in the oil whilst whisking. This is an emulsified dressing, meaning the oil is absorbed into the other components to create a new texture.

3. It is best as a 2 person job, one whisking and one person adding the oil. Or make in a blender and add the oil in a slow stream while the motor is running.

4. The mixture should be pale, creamy and thick.
